This week I stared school again, my days are becoming more busy but that is just life! Thankfully I only have about 3 or 4 more semesters to finish my education in Nutrition, then I will focus more on other things related to nutrition that I should probably mention later.
First week and I can't stop seeing my friends and teacher with a huge cup of hot coffee, it's totally normal since it's winter and so early in the mornings! Personally I don't drink coffee to wake up in the morning. Actually our bodies, according to our circadian rhythm, cortisol is high after we wake up. It's a natural way to stay alert, just like drinking coffee without the coffee. And caffeine can actually reduce this natural effect, who would have known?
According to research it is better to have caffeine (coffee, green tea, matcha, etc.) later in the day, this helps to prevent messing up with our circadian rhythm.
I do enjoy a cup of coffee once in a while, but what I prefer eating a snack with coffee flavor that drinking it... just a personal choice! So I tried to mix up some ingredients that I love with some organic coffee from Wicked Joe that I have been loving lately to create this recipe that include some amazing properties:
- Rich on polyphenols aka antioxidants.
- Healthy fats like coconut and almonds.
- Source of fiber.
- Paleo and Vegan friendly.
INGREDIENTS (makes 21 balls)
1 cup of whole raw almonds
1/2 cup of shredded coconut
1/2 cup of almond flour
1/2 cup of smooth almond butter
1/2 cup of unsweetened nut milk (I used almond milk)
1/4 cup of monk fruit
2 Tbsp of Wicked French Coffee
1 tsp of cinnamon
METHOD
Process in high the almonds until they get finely chopped, add the rest of the ingredients, process until you get a smooth consistency (enough to make balls). Enjoy!
