Mind-blowing Cookie Dough Bars (Vegan)


Who else goes crazy when they have time off? I'm done with summer class and I have two weeks of vacations before the semester starts again. Mornings are so long and slow this days, I go to crossfit, done and then what? I'm trying to keep myself occupied because as much as we all need some rest sometimes we all need some work to do as well!



So one thing that I enjoy doing? Cooking and baking, so I've been getting creative in the kitchen, this time I wasn't sure what I was going after when I was throwing in a bowl a whole bunch of ingredients. The result was pretty amazing!



Back in the day me and my mom used to buy a well known protein bar, they have all the flavors and actually I have to admit that the taste was very good! But those days of artificial flavors are over, we have evolved *raises both hands in the air and angels sing in the background*.



According to my mom these bars what I'm about to share taste just like those bars we used to enjoy! So this makes me so happy because I managed to create something delicious based on my intuition and boredom. Good things happen at those moments too!

Mind-blowing Cookie Dough Bars

INGREDIENTS

(Makes 8 bars)


  • 1 cup of almond flour

  • 1 cup of coconut flour

  • 1/4 cup of coconut oil (melted)

  • 1 tsp of almond extract

  • 1 tsp of vanilla extract

  • 1/3 cup of almond butter

  • 3 Tbsp of monk fruit

  • 2 chopped protein vegan bars or the type you love (I used 22 Days Nutrition Salted Caramel)

  • 1/2 tsp of sea salt

METHOD

Strain the flours into a bowl, add all the ingredients except for the bars. Process or mix until you get a smooth consistency. Add the protein bars and mix softly. Pour into a loaf baking dish with parchment paper and freeze for three hours.
