Hello there! Hope everyone is having an amazing week, mine has been busy but exciting! Today I'm sharing a delicious recipe that will be great fro meal prepping, or for sharing with special people. And guess what, this is my first time using a slow cooker EVER! My mom uses it occasionally so it was at the end right in the darkest part of the closet where we keep pans, and other kitchen appliances that we never use (including a juicer, fryer and a toaster HA!).
Does anybody has the same issue? Buying things that we never use! My parents are like that, but that's a lesson for me.. not to buy things that I won't be using more that 2 times.
Probably from all the things the slow cooker is a keeper! I didn't know how handy and magical it is until I tried it with this recipe... Expect more fun recipes with it! Going back to this recipe, it's super easy to make and it doesn't take that much time to cook. In words of my sister "It taste really good, kind of.. pizza" I wasn't trying to recreate a pizza flavored chicken but as this is an Italian Chicken recipe I can totally understand why she said that.
TIP! This recipe requires marinara sauce and most of them have olive oil or any other type of oil. I suggest you to use fat free marinara sauce to prevent the olive oil from damaging, olive oil is very sensitive so I will always suggest you to use it for dressings and not for cooking.

Italian Chicken in Slow Cooker (Paleo, Keto, Whole 30)

INGREDIENTS
4 skinless chicken breasts
3/4 of a jar of marinara sauce
1 cup of sliced mushrooms
1 chopped yellow bell pepper
1/4 cup of chopped purple onion
1 cup of chopped broccoli
1 tsp of black pepper
1/2 tsp of himalayan salt
1 tsp of garlic in powder
1/2 Tbsp of oregano
1/2 Tbsp of parsely
1/3 cup of chicken bone broth or chicken broth
METHOD
1. Put your chicken breast in your slow cooker with the seasonings, add the broth of choice, the vegetables (except the broccoli) and the marinara sauce.
2. Cook for 4 hours in LOW.
3. Make sure the chicken is fully cook, turn off your slow cooker and add the broccoli and let it rest (covered) for 10 more minutes.
4. Serve and enjoy!
