Hello everybody, coming at you with another delicious recipe that I hope you enjoy as much as I did! I usually prepare some baked goods or treats in Sunday to have throughout the week. These mini pies are packed with vegan protein and healthy fats, the recipe is not vegan although with some substitutions you can have a delicious vegan version of my recipe too! I will have some notes below if you want to do the switch.
The recipe makes 12 filled pies and I actually They were that good, I warn you, they are hard to resist! I didn't share any, sorry not sorry.
STRAWBERRY CREAMY PIES

INGREDIENTS
Crust:
3/4 cup of coconut flour
3 tbsp of monk fruit sweetener
3 tbsp of ghee (melted)
1/2 cup of water or almond milk
1 tbsp of beef gelatin
Filling
4 scoops of 22 Nutrition Organic Protein Strawberry flavor
1/4 cup of monk fruit
1 zucchini shredded
3 tbsp of perfect keto nut butter
3/4 cup of water
2 tbsp of beef gelatin

METHOD

Preheat the oven at 350. Mix all the ingredients in a bowl, then divide in 12 muffin tins, bake for 12 minutes.
Mix all the filling ingredients and pour over the cooled crusted layer and freeze for two hours. ENJOY!
