Sweet Potato Cookie Dough (Paleo, Vegan)


Feeling all the fall love today, but who am I kidding? I love fall foods, definitely one of my favorite seasons. All the festivities to come, Netflix and chill type of weather? YES PLEASE!


Picture yourself... You are at home snuggling with your pup or cat with fuzzy socks, a robe or a oversized sweatshirt. No stress. No hot weather or annoying mosquitos around. You have a movie on, your favorite (maybe Harry Potter, He Is Not That Into You, The Great Gatsby, I don't know, just choose your favorite) and with that you are enjoying a nice bowl of Sweet Potato Cookie Dough.




How good does that sound? Can we just make a movie marathon and eat cookie dough?


But seriously, at any time, you'll enjoy this new recipe I've got for you! I really enjoy doing it after a long day at school, I just take off my makeup, put my hair on a messy bun, change into my comfy clothes and swipe through my instagram feed or pinterest if I'mnot feeling like watching a movie or serie.


Take a time of your day just to stop replying to any messages, and enjoy! We work so hard everyday that we just don't take time to treat our bodies well after that long day, maybe your mind is nonstop but your body is needs to rest! So you go do that and have some delicious cookie dough!

SWEET POTATO COOKIE DOUGH


Ingredients (1 serving)


- 1 scoop of vegan protein (I used this)

- 2 Tbsp of Coconut Flour

- 1/4 cup of water, plus some more if it necesarry

- 1 Tbsp of your sweetener of choice (I used granulated monk fruit)

- 1/4 tsp of Cinnamon

- Just a sprinkle of ginger

- 1 Tbsp of oat fiber (optional) just for some extra fiber


Method


In a cup or little bowl add all the ingredients and mix until you get a nice smooth consistency. Our in in the fridge for a few minutes or you can still even leave it overnight. And enjoy!
