One thing about me is that I cook batches, or in the case, a batch and as I won't be eating all of the cookies the same day I will save them in the freezer and they turn out just fine! No need to reheat them.
In words of my mom; "They were delicious, I can't believe they are low carb! Can we send me the recipe?" Not as ad, I promise! Hope you like these cookies as much as I do!
Almond Butter Heavenly Cookie Bites

Serves 14
Ingredients
3/4 cups of almond butter
2 eggs
1/3 cup of coconut flour
2 Tbsp Golden Nugget Yak Ghee
1/3 cup of monk fruit (PURELYHL for discount)
Method
Preheat the oven at 350F.
In a mixing bowl add the dripping almond butter, if your almond butter is hard add about 1/4 cup of hot water or almond butter.
Add the eggs and mix, the add the ghee.
Add the coconut flour and monk fruit.
Place your cookies in a baking mat and bake for 15 minutes.
Let them cool down and enjoy!
