Hello everyone! Hope you are enjoying your summer so far. For me, it will be the third summer in a row taking summer classes, which is not fun at all but I want to graduate next semester (YEY!). And one of the worst parts of giving away my summer is missing out on fun events!


This year I really wanted to go to KetoCon in Austin! I felt so encourage by some friends who were going so I looked up into flights and dates, I really wish I was going! I search in their website the companies who were going and find out new amazing companies that I never heard of before!

Marigold Bars is one of those companies. A lot of companies will sell keto or low carb products with low quality ingredients and artificial ingredients that usually have a suspicious effect in our bodies, in a short term or a long term. Still it's important to always check ingredients!


I love bars and snacks, and in a world filled with products it's important to notice the ingredients, read labels and choose better products without the need of sacrificing flavor.

I wanted to take some of their fat bombs to the next level so I decided to create a fun and delicious recipe using their Lemon Coconut Fat Bombs with some Raspberries, in total each cup has 6.8g of carbs and 3.7g of fiber, that makes 3.1g of net carbs.


You are going to love this recipe for the summer! Raspberries are in season and they are one of the best low carb fruits with a lot of antioxidants to offer, they created a lovely synergy with the Lemon Coconut Fat Bombs!


No baking required, no mess and you can keep them in the fridge!

In conclusion, if you are following a low carb/keto diet, you should also focus on the quality of the products and not only on the carb content.


My opinion as a nutrition student is that we should always consider the quality of ingredients in the products we decide to buy. HEALTH IS ALSO AN INVESTMENT! And food has a great power on your health so choose well without sacrificing delicious flavors.


For me, Marigold Bars are a win for me and I will recommend their products to anyone who like a good bar option with low carb content.

 

Raspberry Lemon Keto Pies

Serves 12


Ingredients

- 5 Lemon Fat Bombs Marigold (PURELYHL for discount)

- 1/2 cup of coconut flour

- 1/3 cup granulated monk fruit or erythritol

- 2 tbsp of grass fed beef gelatin (optional)

- 5 scoops of your favorite vegan protein powder (used Nuzest - PURELYHL for discount)

- 1/2 cup of frozen raspberries

- 2 cups of water or nut milk


Method

  1. In a mixing bowl add the protein, monk fruit, coconut flour and beef gelatin.

  2. Add the the liquid and mix well.

  3. Pour the mix in twelve silicone muffin cups and top with raspberries.

  4. Finally add the crumbled Fat Bombs and freeze!
