As you may noticed, the tendency of my sweet recipes is the snack size. Simply the perfect size, this way they are perfect for treats, snacks or even to add to... smoothies, maybe? Today is the turn of some Pound Cake, into muffins!
These are the perfect match for a latte, just when you are unwinding down from all the craziness of the day. Do you practice self-care everyday? These are a great add into your self-care routine! A little low carb, sweet treat, made with gentle ingredients:

So no bloating or sugar rush, they are indulgent in a healthy way, also in a way you won't notice how good for you are.
Each day, in the afternoon I disconnect from social medias and all responsibilities and just take the rest of the day to do whatever I want with no pressure. A lovely time to breath, and ease my mind. This is the moment where I take some of the treats I post and enjoy them. And I want this for you too, take some time to rest and give your mind and body some love. You deserve it.

Mix it us as much as you like. This time I used some Yak Ghee, high in vitamin A and K! Ghee is always my go to for baking, it's so nutrient dense and the perfect substitute for coconut oil or butter. This is my personal choice, and the brand I use has a lot of delicious flavors and types! From goat ghee to cow and yak.
Dairy free? YES! I used dairy free cream cheese, made all from cashews! I got it a great deal at the grocery store. This version is easier to digest and it won't cause bloating if you are sensitive to dairy.

Pound Cake Muffins

Serves 12
Ingredients
1/2 cup of almond flour
1/2 cup of coconut flour
4oz of vegan cream cheese
4 eggs
1/3 cup of monk fruit
2 Tbsp of cacao butter
2 Tbsp of vanilla ghee
1 tsp of baking soda
1 tsp of cinnamon

Method
Preheat the oven at 350F.
In a bowl add the dry ingredients and mix.
Add the melted ghee and cacao butter mix and then add the eggs.
Pour the mix in 12 silicone muffin cups.
Bake for 20 minutes.
