There's something about chocolate and coconut that instantly makes my tastebuds jump, anyone else or just me? Well, these protein pudding bars are perfect no matter the time of the year, these are gluten free, low carb and extremely easy to make.


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly chocolate pudding, coconut, almonds and greek yogurt. A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein no bake bars!

We are showing some love to all my peppermint lovers... so underrated sometimes! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Marigold Creamy Vanilla Grass-Fed Protein that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!

Almond Joy Protein Pudding Bars

Serves 6 servings


Ingredients

Chocolate Layer

  • 2 tbsp of Simply Delish Keto & Vegan Chocolate Pudding Mix (PURELYHL for discount)

  • 1/4 cup of ground flaxseed

  • 1 cup of almond flour

  • 1/3 cup of alullose

  • 3/4 cup of water

Vanilla Layer

  • 1 cup of greek yogurt

  • 1 tsp of vanilla extract

  • 4 tbsp of alullose


Toppings

  • 3 tbsp of unsweetened shredded coconut

  • 3 tbsp of chopped almonds


Method

  1. Mix all the dry ingredients of the base very well and add the water.

  2. Pour into a silicone loaf dish.

  3. Mix the ingredients for the vanilla layer and top the chocolate layer with it.

  4. Add your toppings.

  5. Freeze overnight, cut into 6 pieces each loaf pan and enjoy!
