Apple Caramel Granola Muffins

Serves 14 muffins
Ingredients
1 1/2 cup of gluten-free flour
1 cup of gluten-free apple crisp granola (used Grandy Organics)
1/2 of granulated monk fruit
1/2 cup of finely chopped apples
1 tsp of cinnamon
2 whole egg
1 cup of homemade oat milk
2 tsp of vanilla extract
1/2 cup of vanilla cashew milk yogurt
1 pinch of sea salt
6 pieces of cocomels caramels
Toppings
1/4 cup of Grandy's Apple Crisp Granola
1/4 cup of finely chopped apples
Instructions
Preheat the oven at 350F.
Mix all dry ingredients in a bowl.
Add the wet ingredients.
Transfer the batter into 14 silicone muffin cups.
Add the toppings.
Bake for 28 minutes and let them cool down.
Enjoy!
