If you are in the look for something for autumn without involving pumpkin then you might love these donuts! Taking the inspiration by the warm aromas and spices of chai tea to create a delicious apple chai donut.
I think that sometimes pumpkins gets most of the attention sometimes and we forget that apple is also on season! Hello apple pies and strudels! They are one of the best foods of the season and if you ask me, I prefer apple pies over pumpkin pies.
Both are still delicious but right in this case I tend to incline more to apple pie. But well, this Apple Chai Donut situation is totally unbeatable!
This donut is a total experience, the soft baked apple on top with a chai tea infused dough is just what I needed this season. A warm cozy and aromatic donut that will bring up all the vibes for the fall and would pair my almond milk at the same time.
We are using simple and clean ingredients
Coconut flour
Granulated monk fruit
Ghee
Whey protein
Apple
Chai tea
Eggs
So as you can see pretty basic ingredients! The whey here makes the donuts has a nicer fluffy consistency and the slightly brighter yellow color is because I used ginger turmeric ghee from Gold Nugget. My favorite ghee brand.

These are also great for meal prep! It makes 9 donuts and they can be stored in the freezer inside a plastic bag. I stored mine for more than a week since I was in Mexico City and when I came back I just heated them in the microwave, oven or even my air fryer!
The steps are super simple and uncomplicated
Preheat the oven at 350F.
Mix all the dry ingredients in a bowl.
Heat 1 cup of water and steep and brew your tea.
Add the wet ingredients and mix well.
Pour the mix into 9 donut molds.
Top with chopped apples.
Bake for 25 minutes.
Let them cool down and top with extra granulated monk fruit, optional!

Apple Chai Donuts

Serves 9
Ingredients
1/5 cup of coconut flour
1/3 cup of granulated monk fruit
2 scoops of whey protein (used Natural Force grass fed Whey Protein)
1 tsp baking powder
1 tsp xantham gum
1/2 tsp cinnamon
1/4 cup of melted ghee
1 + 1/4 cup of chai tea
2 eggs
1 (182g) chopped apple
Method
Preheat the oven at 350F.
