We are showing some love to all my dessert bread pudding and cheesecake enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the cranberries, laughing cow and eggnog, and also, Canyon Bakehouse Bread.

Keeping it extra delicious, healthy and just epic by using some granola butter, and to make it even healthier we are using RxSugar alullose as our sweetener and of course some of these fantastic Canyon Bakehouse Gluten-Free Bread. A great healthy recipe without sacrificing great taste!
You won't see sandwiches another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some cranberries and to keep things sweet some RxSugar alullose, and for the bread I have been loving these Canyon Bakehouse Gluten-Free Bread. The perfect flavors for this gourmet bread pudding.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat bread pudding another way! These are super easy to make and just super yummy, plus good for you. I have been loving single serving desserts, I have been enjoying if as my post-workout too.
The eggnog, cranberries with the laughing cow is magical, and the addition of the that sugar-free glaze in here takes it to another level, hard to pass this recipe... and a great companion to a creamy latte! You'll love these!

Cranberry & Eggnog Cheesecake Bread Pudding

Serves 1 serving
Ingredients
4 slices Canyon Bakehouse Gluten-Free Bread
1/2 cup of dairy-free eggnog
1/3 cup of egg whites
1 tsp of vanilla extract
1 piece of the laughing cow cheese
1/4 cup of cranberries (fresh or frozen)
Glaze
1/4 cup of powdered granulated monk fruit
1-2 tbsp of dairy-free eggnog
Instructions
Mix the eggnog with egg whites, vanilla, and alullose.
Cut the bread into pieces, and place it in a bowl.
Add the rest of the ingredients and incorporate well.
Transfer into a small baking dish and top with and cheese.
Air fry 6-8 minutes (per side) at 385F.
Mix the ingredients for the glaze and top the bread pudding with it along with the cranberries.
