Apricot Vegan Creme Brûlée

Serves 1
Ingredients
3 sliced fresh apricots
2 tsp of vanilla extract
1/3 cup of granulated monk fruit
1 cup of Forager Project Half and Half Cream
Toppings
1/4 cup of granulated monk fruit
2 sliced fresh apricots
Instructions
Preheat the oven at 350F.
Blend all the ingredients for the filling.
Pour into small ramekin bowls.
Bake in water bath for 25 minutes.
Let it cool down completely.
Top with granulated monk fruit and roast with a kitchen torch.
Top with apricot s and enjoy!
