This recipe has a lot of flavor while keeping it very basic. That's what I'm all about, plus I have been obsessed my iron skillet, I have been using it non-stop on sweet and savory recipes. It's so versatile because you can put it in the oven as well.
Well, this recipe has some of the goodies we all love; for example, bacon! I used Naked Bacon, this one is great because it gets delivered to your home and you can get a customized box of the goodies you like. Plus the quality is amazing, all paleo and Whole 30 friendly.
From having friends over for dinner, to rainy cozy days in, this recipe is perfect! I made this skillet recipe on a rainy day and it was divine! There's something about skillet, one pan recipes and warm veggies that make recipes extra comforting.
In this recipe I decided to complicate myself and cook the chicken and the bacon separately but you can cook it all together in a skillet, do what works for you!
I like poached chicken so I usually cook mine that way with loads of lime juice, salt and black pepper. Until it's fully cooked I incorporated it into the skillet with the rest of the veggies, that same was for the bacon, I used a different skillet to cook it and get it intentionally crispy.
If you decide to cook this all together you'll need to cook firstly the chicken and then add the veggies. Those lemon slices just add a little extra touch of flavor and you can always use the leftover lemon to add it to your water.
Anyways, this recipe is not only delicious and easy, but also comforting, a hug in a bite and nutrient dense! Definitely a good recipe to save for later because of all the qualities, this is a crowd pleaser! Plus making your healthy lifestyle easy, specially if you are bored of the plain foods, try to keep things fun!

Bacon Sun-Dried Tomato Chicken Skillet

Serves 4
Ingredients
- 4 chicken breasts
- 2 sliced of Naked Bacon
- 1 + 1/2 cup of raw broccoli
- 1 cup of sliced mushrooms
- 1/4 cup of sun dried tomatoes
- 1 tsp of sea salt
- 1/4 tsp of black pepper
- 1 sliced lemon
Method
1. Heat an iron skillet with some water and add the broccoli and cover.
2. Aside prepare the chicken as desired, I poached it on lime juice, salt and pepper.
3. Once the water from the broccoli has been evaporated add the mushrooms and add more seasonings. Cook the bacon in that skillet or use a different one.
4. Add the cooked chicken, lemon slices and dried tomatoes.
5. Serve and enjoy!
