For the the base of this cheesecake I used greek yogurt and eggs, along with some cottage cheese for that amazing topping... just a game changer for your recipes and to take any of your meals to another level!


To create the Baklava effect I'm using walnut granola to top it all of along with pistachios and rose petals, most Baklava recipes call for these ingredients so we are getting the essence here!


Have you tried baking with granulated monk fruit? A great way to reduce the sugar in your recipes and overall life, the taste goes 1:1 to regular sugar so it's a great replacement! Love baking and cooking with it.

Baklava Protein Cheesecake

Serves 1-3 servings


Ingredients

Cheesecake

  • 1 cup of cottage cheese

  • 1/2 cup of greek yogurt

  • 2 tbsp of Artisana Organics Pecan Butter with Cashews

  • 2 whole organic eggs

  • 1 tsp of vanilla extract

  • 1/3 cup of granulated monk fruit

Toppings

  • 2/3 cup of Artisana Organics walnut granola

  • 1 tbsp of crushed pistachios

  • 1 tbsp of dried rose petals

  • 2 tbsp honey


Instructions

  1. Preheat the oven at 350F.

  2. Blend the ingredients for the cheesecake.

  3. Pour over a baking dish and bake for 35-40 minutes.

  4. Let it cool down.

  5. Add your toppings.

  6. Enjoy!
