Oh well, hello hello to everyone! Happy to see you here because this recipe is going to rock your socks off in all the goods ways. For all my banana bread and blondie lovers, stick around for this amazing and super easy recipe!
There were honestly super easy to make and they are super fun, thanks to all the sprinkles used in this recipe, I'm a firm believer that there's no age limit to eat and love funfetti recipes... I mean, common! They are amazing!
Well, in this simple recipe we are only using FOUR INGREDIENTS as the base. It doesn't get easier that that, makes this recipe extremely easy and basically fail proof is the fact that we are using Lakanto's newest Banana Bread Mix, which is also gluten free and low carb.
I just loved this mix, such a great hack and option to have in stock. But since I've got a few banana bread recipes already I wanted to step up the banana bread by creating is insanely delicious and fun blondie... cosmic blondies!
Here's what we'll be using for these Banana Bread Cosmic Blondies:

White chocolate chips (used Choc Zero)
Eggs
The white chocolate really adds a special density and flavor for this recipe. Such a good combination of the banana bread with walnuts along with that white chocolate. Eating a low carb and gluten free recipe never tasted so good... and it doesn't get easier than that! Hard to mess this one.
And as topping, well a good and creamy cream cheese based sounded like a great idea, plus I really like how easy is to make and easy to spread. Without all the sugar or butter. I simply used some organic cream cheese (it also has some probiotics!), some monk fruit and a tablespoon of almond milk.
A perfect dessert for any time of the year but with a hint of spring I guess. But since 2020 banana bread become a thing... all year long. And banana bread blondies? O well, sign me up!

The end result
A dense, fudgy and delicious blondie. The taste of the white chocolate really blends amazing with the banana bread flavor! I enjoyed these as my evening snack or dessert. Alone they are amazing but why not? Drizzle some real dark chocolate or coconut on top!

Banana Bread Cosmic Blondies

Serves 12
Ingredients
Dough
1 bag of Lakanto's Banana Bread Mix (PURELYHL for discount)
1/2 cup (3.5 oz) of white chocolate chips
3 eggs
1/4 cup of dye free sprinkles
Frosting
5 oz. of cream cheese (room temperature)
3 tbsp cup of granulated monk fruit
1 tbsp of almond milk
Method
Preheat the your oven at 360.
Melt the white chocolate chips with water bath method.
Mix all the bread mix in a deep bowl, eggs and melted white chocolate. I used a hand mixer.
Add the sprinkles and fold using a spatula.
Scoop the mix into twelve silicone muffin cups.
Bake for 20 minutes.
Mix the ingredients for the frosting using a hand mixer or a spatula.
Once the blondies are cooled down top with cream cheese.
Enjoy!
