Banana Cookie Cream Pies (Gluten Free & Keto)

This is not the usual cookie chip recipe, this is just a major combo that you just REALLY need in your life! How does it sound a cookie chip base filled with a creamy banana mix topped with chocolate pieces... and sprinkles!


Also, it's important to mention that these cookie cups are low carb, gluten free and freaking delicious! This recipe is perfect as a snack or dessert, contains plenty of protein and without all the sugar since we are using a keto friendly cookie mix!



About these Banana Cookie Cream Pies:

I kept it simple and very convenient. I used a keto friendly cookie dough mix for the base and followed the instructions from the container, the one that I used for this recipe was from Good Phats, that has really good ingredients and it's only has 2 net carbs per serving.


The creamy filling is also super simple: banana + greek yogurt + vanilla protein powder + cinnamon and done! It's thick, creamy and loaded with protein!



I also added some plant based protein in vanilla flavor it add some volume, flavor and nutrient density, in this recipe it didn't blend completely with the rest of the ingredients so there were some parts that really reminded me of the cookies!

The combination of the banana and vanilla protein powder is just a little extra touch that makes a difference on the texture too! Since it's a pea protein base it tends to absorb a little bit more of liquid making the mixture denser and thicker. I love incorporating it with greek yogurt for that season.



The perfect afternoon snack or dessert no matter the season! I'm a firm believer that banana pies and cookies are a whole year long type of recipe but with these warmer weathers pies have been on rotation lately... creamy pies just like this one, it's just bananas!

You can see that the ingredients are pretty basic, don't forget to use the ingredients used for the chocolate chip cookie dough mux you decide to you, in this case I used some MCT in replacement of butter and one egg.


For the chocolate as a topping I decided to go with these ones from Evolved chocolate, one of my favorite chocolate brands because of their quality, ingredients and amazing variety of flavors. I used their keto brownie batter that it's just a dream.



To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.


I added a little bit to the greek yogurt mix, but you can leave it like that depending on the ripeness of the banana you are using.

Banana Cookie Cream Pies

Serves 18 serving


Ingredients

For the cookies

  • 1 container of your favorite chocolate cookie mix (I used Good Phats)

  • 1 egg

  • 1/2 cup of MCT oil or butter

Filling

Topping


Method

  1. Preheat the oven at 350F.

  2. Prepare the cookies as the container indicates. I used one egg and MCT for the mix.

  3. Scoop the dough using a cookie scoop into 18 muffin cups, press the dough into each container and create a little pie form.

  4. Bake for 11-12 minutes.

  5. Prepare the filling by blending all the ingredients.

  6. Once the cookies are baked and cooled top with the banana mixture.

  7. Chop the chocolate bar into pieces and top each banana cookie pie cup with them.

  8. Enjoy at the moment or you can also freeze them!
