BBQ Cheesy Chicken Nuggets (Paleo, Whole 30 & Keto)

If you are all about keeping meals simple then you came to the right place because as much as I love creating new recipes as a food blogger I also love a good simple meal most of the time. Protein + veggies + healthy fats. That's my nutrition formula that I love to share with my clients.


This recipe is for all cooks looking for a healthy fun dinner!


This idea was completely spontaneous and I'm not even kidding when I say this was made in less than 40 minutes. That's it! I even used two methods so this is legit a recipe that can be made in so little time and feeds a crowd!



Meet my BBQ Cheesy Chicken Nuggets! They are not only cute, but they are also super easy to make and super flavorful; gluten free and low carb as well, using simple ingredients that can feed a crowd while still keeping the nourishing goods.


These are not fried nuggets. I use two methods; oven baked and air fried. Both work perfectly and with any of these methods you'll get a crispy chicken outside with a juicy inside. That's a finger licking chicken recipe win!



For this recipe I used paleo friendly BBQ since it's made with simpler and less processed ingredients. It's also lower in sugar, the one I used is from Good Food for Good sauce, they are a great company with amazing values. Their products are 10/10.



For the cheesy flavor I used cheese protein puffs from Shwred Food. These are great low carb snacks with a good source of protein too. And as you'll see a great kitchen hack to use as bread crumb or panko replacement on recipes.



BBQ Cheesy Chicken Nuggets Ingredients:

  • Chicken breast

  • Limes

  • Paleo BBQ sauce

  • Pork panko

  • Nutritional Yeast

  • Sea salt

  • Black pepper



The Lime Hack:

I'm not sure if I'm the only one but, I add lime juice to all my meats to make them even tender and soft to bite. The acidic effect is great to create the juicy and soft meat, chicken or even fish. Plus it really adds a great flavor.



It's just my kitchen staple.


This is a meal prep friendly recipe, you can make this on batches and have it ready to go for the busy week ahead, this is also a picky eater friendly recipe as well as a kid friendly recipe. Healthy and friendly everything!


Oven Baked BBQ Cheesy Chicken Nuggets:

  1. Preheat the oven at 350F.

  2. Place the chicken in a baking tray, squeeze the lime and add sea salt and pepper.

  3. Cover with BBQ sauce and pork panko.

  4. Bake for 25 minutes.


Air Fried BBQ Cheesy Chicken Nuggets:

  1. Preheat the oven at 400F.

  2. Place the chicken in a baking tray, squeeze the lime and add sea salt and pepper.

  3. Cover with BBQ sauce and pork panko.

  4. Air fry for 40 minutes.



Gluten free and keto? No problem! It's all about adjusting and finding the right recipes and ingredients so if you are on your gluten free or keto/low carb journey you are going to love this simple and amazing dinner.

BBQ Cheesy Chicken Nuggets

Serves 6


Ingredients

  • 6 skinless chicken breast (cut into 1x1 inch)

  • 3 limes

  • 1/4 cup of paleo BBQ sauce

  • 1/4 cup of pork panko (or almond flour)

  • 1 tsp of sea salt

  • 1/2 tsp of black pepper

Method


For Oven:

  1. Preheat the oven at 350F.

  2. Place the chicken in a baking tray, squeeze the lime and add sea salt and pepper.

  3. Cover with BBQ sauce and crushed cheese puffs or panko.

  4. Bake for 25 minutes.

For Air fryer:

  1. Preheat the oven at 400F.

  2. Place the chicken in a baking tray, squeeze the lime and add sea salt and pepper.

  3. Cover with BBQ sauce and crushed cheese puffs or panko.

  4. Air fry for 40 minutes.
