No bake keto friendly and delicious ice cream cake bars! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But this ice cream birthday cake bars are the perfect dessert to prepare since it takes just a few ingredients to make.

To add that extra magical factor of this recipe I also included some of the chocolate chip cookie dough bars, such a game changer and adds a really special touch to the cake bars! And it really brings up that extra taste of rich chocolate and just another extra texture. These ice cream cake bars are EPIC!

Birthday Cake Cookie Dough Ice Cream Bars

Serves 12 servings
Ingredients
Base
4 almond flour tortillas
Ice Cream Mix
1 pint KETO Sea Salt Caramel Ice Cream (I used here)
1 cup of greek yogurt
6 Keto Chocolate Chip Cookie Dough Bars (used Core Foods)
* For vegan option use coconut yogurt and vegan ice cream ;)
Method
Cover two silicone loaf dishes using the tortillas.
Mix the rest of the ingredients (leave some pieces of the bars for topping) and pour over the tortillas.
Add some low carb sprinkles.
Freeze overnight, cut into 12 pieces and enjoy!
