Birthday Cake Cookie Pies (Gluten Free & Low Carb)

Oh guys, cookies and cookie dough is my love language... add some Marigold grass fed whey, cream cheese and cookies and my tastebuds are in paradise, and they are just another reason to enjoy my workouts... I've got my protein snacks to fuel my body.


Cookie, a pie crust and a cream cheese filling! There's a lot to say about this recipe; a healthy, gluten free, low carb and high protein combination of all our favorites in one? Just in time for my birthday, or really any time of the year... these are just a tastebud pleaser.



About these Birthday Cake Cookie Pies:

These are just every cookie and birthday cake fan dream! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of the keto friendly birthday cake cookies and Philosophie Cosmic Elixir that really adds a great touch of wellness and coconut milk powder.


To add that cookie factor of this recipe I also included some of the LesserEvil Birthday cake Keto Cookies, such a game changer! And it really brings up that extra taste and soft texture from these chewy cookies, just incredible guys.


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Marigold Creamy Vanilla Grass-Fed Whey Protein, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla milk shake (keto and gluten free!).



All in one: birthday cake, cookies and a pie! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the organic cream cheese... also source of probiotics!


For the pie crust I simply used California Country Gal Perfect Pie Crust, that's it's also keto friendly and low in carb. Their products are just amazing, have tried their bread mixes and pancake/waffles mixes and they are all legit made with the best ingredients. This was no different.



The Sweetener of these Birthday Cake Cookie Pies:

With a delicious addition of alullose instead of refined sugars for the win! In this occasion I used a homemade version of alullose from Rx Sugar which is made from foods while having no calories or a glucose impact.



Keto & Gluten Free Perfect Pie Mix!

For the special touch of this recipe I decided to use some California Country Gal Perfect Pie Crust, as mentioned earlier their mixes have been one of my favorite thanks the the legitness from their ingredients, they never disappoint.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the chewy cookies works perfectly with the creamy cream cheese mix with the pie crust, overall chewy, flavorful and a fiesta in your mouth.


Melts in your mouth! The keto cookies bring up that amazing texture factor too that makes these even more satisfying. My friends and boyfriend loved these cookie pies, they didn't even know these were low carb and healthy!



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Birthday Cake Cookie Pies

Serves 12 servings


Ingredients

Base

Filling

  • 2 scoops of Marigold Creamy Vanilla Grass-Fed Whey Protein

  • 1 block (8oz) of organic cream cheese

  • 1/4 cup of Philosophie Cosmix Elixir (or 1 tsp of vanilla extract)

  • 1/3 cup of alullose

Topping


Method

  1. Preheat the oven at 350F.

  2. Mix the ingredients for the base in a deep bowl.

  3. Add the pie dough in twelve silicone muffin cups.

  4. Mix the ingredients for the filling and top the pie base with it.

  5. Add the cookies on top and bake for 20-24 minutes.

  6. Enjoy!
