The other day we were at the supermarket and they had really good BOGO deals, my mom grabbed some paleo pancake mix bags because my sister loves them, but don't ask how often does she makes pancakes... RARELY! But it's so hard to resist a good deal, right? We all have been there, buying things just because the deal was very good.
So we've got four bags of paleo pancake mix in the pantry, we rarely eat pancakes just because of the lack of time or motivation of preparing them in the morning. But not anymore! Excuses are out in this one and if you feel this way, well, this recipe is for you!
The thing about pancake mix is that it's SUPER versatile, the ideas are endless and if you don't believe me, check out some of these ideas!

I usually use and recommend paleo pancake mix because it's less inflammatory and there are a lot of cool brands and options out there but for this recipe I decided to use Lakanto Pancake Mix, which is also keto, plant based and high in fiber. Code: PURELYHL for discount.
Each serving of this pancake mix has 6 grams of net carbs. Pretty decent for all my keto friends out there! Plus this one is sweetened with monk fruit. I really like the consistency and the fluffiness of these pancakes, notice the picture. The density is pretty cool and the taste hits the spot.
You don't have to use the same pancake mix, if you are vegan feel free to use your favorite version and add all the toppings you like. This time I kept it simple... no raisins for me please! But some chocolate? Of course.
Also, this recipe is eggless but for the bowl and consistency we want I added 1 tsp of grass fed vanilla whey protein and of course, cinnamon.
The steps are pretty simple:
Cook the pancake mix as you should.
Cut into little pieces
Add the frothy mix
The secret of these is to add the cinnamon and the protein powder to give it that extra delicious flavor. Pro tip: For frothy milk, use a milk frother. And to make things even more fun, add some low carb sprinkles!
For extra healthy fats and flavor I decided to add one tablespoon of Caramel Keto Creamer, the one I use is from Natural Force. But it's also great on coffee! But on baked goods, and sweet recipes is a game changer!
This is super super easy, so this is also a winner recipe for anyone who has a busy schedule but stills loves cooking a little bit, specially treats after that busy day!
This recipe is for one serving but feel free to make more by multiplying the amount of ingredients! Because this recipe is not only great for breakfast but I have also been enjoying it as a snack!

Birthday Cake French Toast Bowl

Serves 1
Ingredients
- 1/3 cup of paleo pancake mix
- 3 tbsp of water or vegan milk for the pancake mix
- 1/4 tsp cinnamon
- 1 tsp of grass fed vanilla protein
- 1/2 cup of almond milk
- 1 tbsp granulated monk fruit
- 1 tbsp of caramel keto creamer
Toppings
- Chocolate
- Low carb sprinkles
- Whatever you want
Method
1. Prepare the pancake mix as the package says for one serving, for mine it was 1/3 cup of pancake mix + water
2. Make your pancakes.
3. Cut them in pieces and put them in a bowl.
4. Add the almond milk with monk fruit.
5. Let it sit for a couple of minutes and bake for 5 minutes.
6. Enjoy!
