There's something about anything birthday cake that I love, it might be the sprinkles and the pretty colors... anyone else feels the same way about birthday cake? On the other side there's always a birthday to celebrate so we only need that excuse!


These easy birthday cake freeze fudges are just a fun and delicious snack to enjoy at any moment! Low carb, free from dairy and gluten.. these colorful bites have only 5.4 net carbs per serving.



About these Birthday Cake Fudge Bars:

For this recipe I used some coconut butter, of course, cereal to get that delicious crunch , dairy free and keto friendly chocolate, peppermint chocolate chips to add a little bit of extra color and some strawberries to add the nutrient density and add more color.


These are a great snack and very satisfying since I also used protein powder to add a bit of more density without using any flour. These are also low carb and gluten free!



The combination of healthy fats and protein here is just the perfect combination for steady glucose levels! From the fats from the coconut butter and chocolate here along with the protein this is just a great snack, plus includes some antioxidants too.


These are super fun, not only to look at but to also make; they are super easy to make. Only mix, pour, top and freeze. These are just a fail proof and the flavor is INSANE!

For the chocolate I'm using Jojo's, my favorite one to bake, freeze or melt! It's keto friendly and all of my family really enjoys it... I even send some bags to my sister in Mexico City since she is also hooked by this healthy chocolate.

Birthday Cake Fudge Bars

Method

  1. Preheat the oven at 350F.

  2. Mix the ingredients for the bars, make sure to add the melted coconut butter and warm almond milk.

  3. Press the dough into a silicone mold, I used two loaf containers.

  4. Add the toppings and freeze overnight.

  5. Cut into 12 pieces and enjoy!
