As I mentioned earlier, I used California Country Gal GF Pizza Dough Mix and Siete Foods Mashed Black Beans which are super versatile and made with just simple ingredients, perfect for your burritos, tacos and all your Mexican comfort foods! Along with the seasoning, cheese and some taco seasoning.
I used baby bell light cheese wheels, the perfect size and creates that amazing cheese pull. As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.

Black Bean & Cheese Empanadas

Serves 6 servings
Ingredients.
Empanada Dough
1 pack of California Country Gal GF Pizza Dough Mix
1/2 cup of egg whites
½ cup of warm water
1 tsp of garlic
½ tsp of pink salt
⅛ tsp of black pepper
½ tsp of taco seasoning
Filling
6 pieces of baby bell light cheese pieces
2/3 cup of Siete Foods Mashed Black Beans
Pico de Gallo for Garnish
Method.
Preheat the oven at 350F.
Mix all the dry ingredients for the empanadas and then incorporate the wet ingredients.
Create 6 balls with the dough, carefully using your hands fill them with the cheese and black beans (without over-stuffing with beans) and seal carefully.
Place them in a baking dish and bake for 18-20 minutes.
Serve with pico de Gallo and enjoy!
