This are easy to make, creamy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of marinara and the combination of the garlics in this recipe, the black garlic is actually kind of sweet so it's a nice contrast with the tofu marinara sauce.

Black Garlic Vegan Marinara Pasta

Serves 2
Ingredients
1 block of soft organic tofu
1/2 tsp of kosher salt
3 roasted tomatoes (peeled)
⅓ cup of roasted chopped red onion
3 chopped garlic cloves
⅛ tsp of black pepper
½ tbsp of dried parsley
1 tsp of dried oregano
2 tsp of white vinegar
4 cups of cooked gluten-free pasta
3 leaves of fresh basil (plus for decoration)
1 tsp of red pepper flakes
2 pieces of black garlic
Instructions
Bake covered in foiled paper, tomatoes and red onion for 25 minutes at 350F.
Start cooking in a non-stick skillet, cook the garlic for 2 minutes on medium heat and then add onion, tomatoes and seasonings until it starts simmering.
Add the tofu and crumble it with the spatula.
Let it cook and simmer for 6 minutes.
Serve with cooked pasta, top with red pepper flakes, sliced black garlic and fresh basil on top.
