Blueberry Caramel Pie Popsicles (Keto, Dairy Free)


Summer is not complete without popsicle recipes, isn't that right? I remember when I was about 12 years old I used to sell mango popsicles to my neighbors (which were a complete hit!), this is just a must each summer season, specially when temperatures here go from the 80 to 103F.


And one thing that this 2020 has thought me is that we have to make things work even if the situation is quite challenging. In this case, even though temperatures during the day are crazy a good popsicle simply hits the spot.


I have made some popsicles before, for example, my Cereal Cheesecake Popsicles are huge hit! I used Magic Spoon cereal (PURELYHL for discount) and they turned out absolutely epic! And apparently I'm keeping the pie topic on with these Blueberry Caramel Pie Popsicles.



Today I used Heka Good Foods Blueberry Muffin Keto Bars (purelyhealthyliving for discount) as the main inspiration. This is one of my favorite flavors too! With a good dose of almond pieces and a delicious and authentic taste of a blueberry muffin.


I also used these on my Blueberry Chocolate Ricotta Pies, which they are also so good! But I think this recipe may be just a little bit better. Plus it's super easy to make, mess free too, which is a quality I always look in recipes.


You just need your blender!


The ingredients used here are super basic, and all keto friendly, dairy free, gluten free, no sugar too! We are using granulated monk fruit too. So you can count on these cold bad boys to be keto and diabetic friendly! Some of the ingredients used in this recipe are:

Each popsicle has only 1.6 net carbs! I know, really impressive! And yes, the taste is so great, indulgently keto friendly and free from most inflammatory ingredients (vegetable oils, dairy, gluten and sugars). Also free from gums that may cause bloating too!


These are just the perfect summer snack to feel confident under those crop tops or bikinis since you won't be bloated! I mean what else can I ask for!?

Blueberry Caramel Pie Popsicles

Serves 10


Ingredients


Method

  1. Chop the bars into little pieces with a knife.

  2. Spread the bar pieces (leave some to blend) into 10 silicone popsicle molds

  3. In a blender add the rest of the ingredients, including the leftover bars.

  4. Blend very well and pour the mix into each popsicle.

  5. Freezer overnight, ENJOY!
