We are showing some love to all my waffle and goat cheese enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the goat cheese and sugar-free maple and a touch of sugar-free glaze, and also, Banza Gluten-Free Waffles in Blueberry.

Keeping it extra delicious, healthy and just epic by using some chickpea waffles for the pretty extra protein here, and to make it even healthier we are using RxSugar maple syrup as our sweetener, some goat cheese, sugar-free glaze, and of course some of these fantastic Banza Gluten-Free Waffles in Blueberry. A great healthy recipe without sacrificing great taste!

Blueberry Maple Goat Cheese Waffle Casserole

Serves 1-2 serving
Ingredients
Toppings
1/4 cup of powdered monk fruit
2 tsp of water
Method
Preheat the oven at 350F.
Mix all the unsweetened almond milk, egg whites and maple syrup.
Slice the waffles in half.
Add the waffles to the mix and let it soak, transfer to a baking dish.
Add the goat cheese
Bake for 20-24 minutes.
Mix the ingredients for the glaze.
Let them cool, top with sugar-free glaze and enjoy!
