The base is made with simple ingredients, brioche buns, eggs, unsweetened almond milk, condensed milk, pumpkin puree and for the glaze along with some powdered monk fruit.
Feel free to to use your favorite low carb sweetener, I used granulated monk fruit but I also love using monk fruit or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Brioche Bread Pumpkin Spice Tres Leches

Serves 6 serving
Ingredients
6 St. Pierre Brioche Roll Buns
1/2 cup of unsweetened almond milk
1/4 cup of Nut Pods coffee creamer in cookie butter (PURELY_HEALTHY_LIVING for 15% off!)
1/2 cup of pumpkin puree
2 tbsp of condensed milk
1 tsp of vanilla extract
1/4 cup of granulated monk fruit
1 whole organic egg
Maple Glaze
1/2 cup of powdered monk fruit
1 tbsp of water
2 tbsp of sugar free maple syrup
Method
Preheat the oven at 350F.
Mix all the wet ingredients for the tres leches.
Place the brioche buns in a greased baking dish and poke some holes with a chopstick.
Soak the brioche bread with the tres leches mix.
Bake for 25 minutes.
Mix the ingredients for the glaze.
Let them cool, top with sugar-free maple glaze and enjoy!
