Brown Sugar Banana & Coconut Pie

Serves 6-8 servings


Ingredients

Pie Crust

  • 8 scoops of Nuzest Vanilla Pea Protein (PURELYHL for discount)

  • 1/2 cup of granulated monk fruit

  • 1/2 cup of egg whites

  • 1 tsp of vanilla extract

  • 1/4 cup of water

Filling

  • 2 bananas (heated in the microwave for 1:30 minutes)

  • 3 tbsp of Torani sugar-free brown sugar cinnamon syrup

  • 2 tbsp of sugar-free vanilla instant pudding mix

  • 3 tbsp of shredded coconut

Toppings

  • 3 tbsp of shredded coconut

  • 3 tbsp of raw pistachios

Method

  1. Preheat the one at 350F.

  2. Mix all the ingredients for the pie crust and spread in a silicone baking dish.

  3. Bake for 15-17 minutes.

  4. Mix all the ingredients for the filling and spread on top after the pie has baked.

  5. Add your toppings, refrigerate for a couple of minutes, slice into 6-8 pieces and enjoy!
