Butternut Squash Brussel Feta Walnut Salad

Serves 4
Ingredients
2 cup of frozen chopped butternut squash
2 cups of sliced brussel sprouts
1 cup of steamed broccoli
2/3 cup of whole milk greek yogurt
4 tbsp of Kosterina Walnut Balsamic Vinegar
1 tsp of sea salt
1/2 tbsp of dijon mustard
1 tbsp of maple syrup
1/8 tsp of black pepper
1 tsp of garlic powder
1/3 cup of feta cheese
3 tbsp of drie cranberries
Instructions
Air fry the butternut squash and brussels for 18 minutes at 350F.
Mix the greek yogurt with seasonings, mustard and maple syrup.
In a bowl add all the vegetables and add the mixed dressing.
Cover the vegetables completely in the dressing, top with feta cheese and cranberries.
