Butternut Squash Cinnamon Crunch Bread

Serves 6 big slices


Ingredients

  • 1 1/2 cup of oat flour

  • 1/2 cup of cinnamon cereal (crushed)

  • 2/3 of granulated monk fruit

  • 1/2 tsp of pumpkin spice

  • 1 tsp of cinnamon

  • 2 eggs

  • 1/2 cup of vanilla greek yogurt

  • 2 tsp of vanilla extract

  • 1/2 tsp of almond extract

  • 1/2 cup of butternut squash puree


Sugar-Free Crumble Topping

  • 1/2 cup of cinnamon cereal (crushed)

  • 1/3 cup of sugar-free maple syrup


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients for the bread in a bowl.

  3. Add in the rest of the ingredients until fully incorporated.

  4. Transfer silicone baking loaf dish.

  5. Mix the ingredients for the crumble in a bowl, top the bread with it and spread it.

  6. Bake for 45-50 minutes.

  7. Let it cool down, slice into 6-8 slices and enjoy!
