Butternut Squash Tacos with Almond Chipotle Slaw

Serves 2
Ingredients
Butternut Squash
3 cups of butternut squash
1/3 cup of chopped red onion
1 tsp of garlic
1/8 tsp of black pepper
1 tsp of Italian seasoning
1/4 tsp of sea salt
Slaw
2 tbsp of Artisana Almond Butter
1/2 cup of dairy-free yogurt
2 tbsp of sliced jalapeño
1/3 cup of chopped carrots
1/4 cup of chopped red onion
2 cups of shredded red cabbage
2 tbsp of chipotle puree
1 tsp of garlic
1/8 tsp of black pepper
1/4 tsp of sea salt
Serving
Sliced almonds
Corn Tortillas
Instructions
Add the butternut squash and onion with seasonings in your air fryer basket and cook for 20-22 minutes at 350F.
Wash and chop all the vegetables for the slaw, add them into a bowl and add the rest of the ingredients, mix well.
Heat your tortillas on a skillet and serve with butternut squash and slaw, cilantro top with sliced almonds and enjoy!
