These bars don't require an introduction, to me telling you how good they are... these are AMAZING! Such a great combination of flavors and textures in these creamy and soft chocolate caramel pudding bars is just another level; low carb, gluten free and using better for you ingredients.


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly vanilla pudding mix from Simply Delish, greek yogurt, keto friendly caramel and a delicious chocolate shell. A great protein snack to fuel your body. Delicious, low carb friendly and gluten free protein no bake cereal bars!

We are showing some love to all my mocha and caramel lovers... a classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish Keto Vanilla Instant Pudding and some greek yogurt that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Adding some gluten free and low carb cereal from my faves, grain-free and low carb pancake mix Super Fat for the base of these creamy pudding bars. I have been also obsessed with Perfect Keto products!, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.



A fluff low carb pancake base, a creamy caramel mocha filling... the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the vanilla pudding mix with the caramel and coffee here makes the greek yogurt bar extra thick and extra delicious, soft and creamy! Just a combo that you cannot resist.


Melts in your mouth! It's soft, creamy and dreamy! This is just a perfect dessert, post workout or snack that takes just a few steps and it's very easy to make.



You might want to save this recipe because a second recipe might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Caramel Mocha Pudding Bars

Serves 9 servings


Ingredients

Base

  • 1 cup of low carb pancake mix

  • 1/3 cup of egg whites

Caramel Pudding Mix

  • 2 cups of greek yogurt

  • 1 pck of Simply Delish Keto Vanilla Instant Pudding Mix (PURELYHL for discount)

  • 2 tbsp of instant coffee

  • 2 tbsp of keto caramel syrup (used RxSugar)

  • 1 tsp of vanilla extract

  • 1/3 cup of alullose

Toppings


Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the base.

  3. Spread the mix in a silicone 8x8 dish.

  4. Bake for 18-22 minutes.

  5. Mix all the ingredients for the caramel pudding mix.

  6. Spread on top of the base already baked and cooled.

  7. Cut into 9 pieces.

  8. Melt carefully the chocolate and drizzle on top of the bars.

  9. Enjoy!
