Carrot cake is probably on my top 3 of cakes, if not the first... seriously it's so good! And today I'm combining two of my two favorite things ever, carrot cake and waffles... practically cake for breakfast while also being low carb and gluten free. Who said me?
Besides we are keeping this recipe extremely easy and fail proof, anyone can prepare these waffles and enjoy some good breakfast or snack! I'm using some of my favorite keto friendly ingredients that make my life so much easier and might make yours too!
About these Carrot Cake Keto Waffles:
Well, this recipe super easy to make and to prepare as your meal prep, I used Perfect Keto Pancake & Waffle Mix (my latest obsession), this is gluten free and low carb. I added some cinnamon, essential for that carrot cake touch and of course a shredded carrot... extra fiber and antioxidants here!
I also used some of Rx Sugar keto friendly and keto certified cinnamon syrup and guys, it was amazing! The cinnamon syrup is just something you need to try ASAP, or simply pair these with their pancake syrup... another favorite of mine.

Easy Peasy Waffles.
I used my favorite and ail proof keto friendly mix, Perfect Keto offer different and great quality products. This keto waffle & pancake mix has been on repeat, I made them in batches and freeze them, this way they will be ready to eat at any moment!
For this recipe I simply mixed some eggs, carrots, coconut, cinnamon and some extra alullose... mix, pour and cook!
Here are the ingredients I used for these Carrot Cake Keto Waffles:

Cinnamon
Alullose (used Rx Sugar)
Eggs
Shredded Carrots
Unsweetened Shredded Coconut
Toppings, optional for always so delicious! I simply added some greek yogurt combined with more alullose, some more carrots and some of this Keto Cinnamon Syrup from Rx Sugar a game changer and all simply so irresistible.
Healthy and delicious Waffles.
So ingredients are wholesome without any weird additional ingredients. For example, no artificial colors or flavors since we are using keto friendly cinnamon syrup and alullose from Rx Sugar and a better for you pancake mix.
Instead of subtracting add better ingredients and replace the ones that may cause you inflammation. There's always a healthier replacement when it comes to our favorite recipes, and to be honest these waffles are the perfect example along with other recipe here in the blog!
This is how I made these super easy Carrot Cake Keto Waffles:
Preheat the your waffle maker.
Mix the dry ingredients for the waffles in a bowl.
Add the eggs and carrots, mix again.
Pour about 1/4 cup of the batter into the waffle maker and cook for 4-5 minutes.
Let them cool down.
In a little bowl mix the greek yogurt, monk fruit, vanilla and sprinkles.
Top two of the waffles with the greek yogurt shredded carrots and keto cinnamon Syrup Rx Sugar.
Freeze or enjoy at the moment.
