Comfort food is always on season, no need to wait for fall or summer, right? Specially when we are talking about a pizza related recipe! This recipe is inspired by one of my comfort foods, pizza and cheese! All in a delicious, gluten free and low carb version that you are going to love!
This is a simple and vegetarian recipe that will be great as an appetizer, snack or main dish! Easy peasy to make and I promise you that your tastebuds will be very pleased and happy with the result.
About this Cheese Stuffed Pizza Bread:
This is extremely easy to make and extremely flavorful! The ingredients are also super basic and probably most of them you've already got in your pantry; pizza or marinara sauce, cheese and for the bread mix I used one that I usually keep in my pantry.
Keeping it nice, delicious and low carb! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.
For the keto bread I used the mix from Fox Hill Kitchens that's gluten free and keto friendly, the instructions are easy to follow and the bread is seriously mega fluffy! I followed the instructions from the container and just added my fillings and toppings.
What's in this Cheese Stuffed Pizza Bread?
As I mentioned earlier, I used a a keto bread mix, pizza sauce with no sugar added, cheese, seasonings, added some extra parmesan on top and fresh basil leaves from my garden! The seasonings included in this recipe are real salt, black pepper and garlic powder.
For the crispiness in this recipe I simply coated the bread before putting into the oven with some egg whites and pok panko, for fully vegetarian option you can use almond flour. This step helps to keep the cheese inside and add the major texture.
For the no sugar added pizza sauce I used Otamot, love it because it's made with simple and wholesome ingredients. Just the perfect sauce to create your favorite recipes! These are easy to make, cheesy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of pizza sauce, fresh basil, mozzarella cheese and basil... all together is just a pleasant experience.
The additional sauce on top is just perfect with the cheese filling, the pork rind panko coating was also a game changer! The finishing touch of fresh basil is just PERFECT *chefs kiss*, it just makes it even more elegant while also being such an effortless recipe!
I enjoyed mine for dinner or lunch, alone and even as a snack! A recipe worth making again no matter the season, while watching movies or to give them to the kiddos as a fun snack! At the end it's hard to resist this stuffed, cheesy, healthy pizza recipe... double points for this being nourishing too!

Cheese Stuffed Pizza Bread

Serves 9 servings
Ingredients
Bread
1 keto bread mix bag (I used Fox Hill Kitchens)
1 + 1/2 cup of cold water
1 tbsp of avocado oil
3 tbsp of apple cider vinegar
3/4 cup of hot water
Filling
1/2 cup of marinara sauce no sugar added (used Otamot)
1/2 block (150g) of mozzarella cheese (or panela cheese)
1/8 tsp black pepper
1/8 tsp of real salt
1/8 tsp of garlic
Coating
1/2 cup of egg whites
1/2 cup of pork panko (or almond flour)
Toppings
A bunch of fresh basil leaves
Parmesan cheese
Method
Preheat the oven at 315 F for convection oven (follow the instructions of the bread mix you decide to use).
Add the ingredients for the bread as suggested.
Let it sit for at least 1 hour to let the dough raise.
Cut the block of cheese into medium sized cubes and add one to the bread and using your hands covered it with the dough.
Repeat this step with the rest of the dough, mine made 9 breads.
Let sit each bread for a 5 minutes and then make sure that the cheese is fully covered.
Dip each bread in the egg mix and then roll it into the pork panko or almond flour.
Place them in a baking tray separately and bake for 45-55 minutes and don't open the oven until at least they've reaches 45 minutes.
Take them out of the oven, let them cool down and then add the marinara sauce and extra toppings.
Serve and enjoy!
