Cheesecake French Toast Casserole (Paleo & Keto)


If you are not a morning person you are about to become one. All the goods of being an early bird in a heavenly bite, even if you are fasting that's totally fine. This is a great delicious meal to break that fast!


If you thought that french toast was pretty darn good at its own wait till you try this recipe. It's not the usual french toast, it's a casserole... a CHEESECAKE casserole! I mean, how can anyone could possibly resist this fusion?


And the best part is that this recipe is great for meal prepping since it serves 8 with 8.4 grams of protein per serving, 5.1 grams of total carbs with 2 grams of fiber. So this is why it's a great recipe to break your fast and to make if you are following a keto lifestyle.



As sweetener we are keeping it keto too. We are using granulated monk fruit as in all of my recipes! Because my point here is to make healthier decisions without sacrificing flavor and of course, avoid the inflammatory effects from sugars.

Anyways, this casserole. Cheesecake. YES! It's awesome and super easy to make too. It's also a blender recipe and the steps are minimal, there's no way this recipe can fail. And as for the french toast part, we are using Mikey's Paleo Original English Muffins, these are pretty amazing since the ingredients are paleo certified and these are also keto friendly!


Each english muffin has 5 grams of total carbs and 3 grams of fiber. I also love their cinnamon raisin, you can also use these in this recipe! I'm just using the original ones because those were the ones I have in my fridge.


For the cheesecake part we are using ricotta cheese, guys, I'm obsessed! It's very versatile and it's such a great way to get some calcium and protein in!

Cheesecake French Toast Casserole

Serves 8

Ingredients

- 2 cups (200g) of almond based ricotta cheese (or regular)

- 4 eggs

- 1/3 cup of granulated monk fruit (PURELYHL for discount)

- 1 tsp of baking powder

- 1 tsp of cinnamon

- 1 low carb chocolate bar

Method

1. Preheat the oven at 350F.

2. Place all the ingredients but english muffins and chocolate in a blender and mix well.

3. Pour the mix in a circular baking container or cooking skillet.

4. Slice the english muffins and place them over the mix.

5. Add chopped chocolate.

6. Bake for 30 minutes.

7. ENJOY!
