Cheesy Crispy Dill Pickles (Keto & Gluten Free)

Any pickles fans out there? This fun recipe is for you, just another fun appetizer of addition to your salads! These pickles are crispy, and cheesy and of course, easy peasy to make... just a great recipe for you to enjoy any day of the year!


There's always something about a crispy and cheesy combination that is always irresistible! And since I'm a huge fan of pickles and got a great couple of jars the other day that I just needed to make this fun recipe... my style!



About these Cheesy Crispy Dill Pickles:

This is extremely easy to make and extremely flavorful! The ingredients are also super basic and probably a list of ingredients you've already got in your pantry; pickles, cheese and for the crispy factor I'm using crushed pork rinds.


The pork rinds, in this recipe work for the coating of the pickles along with some egg whites what will work as our glue. You can get them at the store or you can crush some classic pork rinds (I try to stick to humanely raised pork) or you can also simply use almond flour to keep this recipe low carb and gluten free.



What's in these Cheesy Crispy Dill Pickles?

As I mentioned earlier, I used a pork rind panko, egg whites for the coating, cheese, seasonings and of course our main ingredient, pickles! The seasonings included in this recipe are real salt, black pepper, garlic powder and a sprinkle of red pepper flakes.


Just a fun veggie snack or appetizer! You can even add this to your salads and burgers for a next level of yumminess.

Overall, these are the ingredients needed for these Cheesy Crispy Dill Pickles:

  • Pickles

  • Crushed Pork Rinds

  • Egg Whites

  • Cheese

  • Black Pepper

  • Real Salt

  • Garlic

  • Red Pepper Chili Flakes

These were great as a snack, side dish and even as a vegetarian salad if you switch the pork rinds to almond flour! Remember to keep ingredients wholesome and pick wisely! I love having fermented pickles, with no sugar added on my pantry just because it goes so well in so many recipes, this is a clear example!

Pickles are made from fermented cucumbers, these beauties area great source of minerals and thanks to the liquid content is great for hydration. They are also a source of beta-carotene that our bodies eventually turn into vitamin A.


Fermented pickles can also be great for digestion since they provide probiotics! And fun fact, the liquid of the pickles has also been known to provide electrolytes.. a great post or pre workout? Thoughts?


And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

The end result

These are easy to make, cheesy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of pickles, chili and cheese... all together is just a pleasant experience.


Thanks to the egg whites and baking method the pickles turns out being crispy and easy to cut, not dry and so flavorful! The air frying process makes these even crispier without dipping them in any oil.


I enjoyed mine for dinner or lunch, alone and by the forkful as a snack! A recipe worth making again no matter the season, while watching movies or to give them to the kiddos as a fun snack! At the end it's hard to resist these cheesy, crispy and flavorful pickle while getting some vitamin A from it.



Not boring or complicated! This are a great lunch for kids and grown ups. Pro tip: You can air fry them for a few minutes for an extra crispy experience!

Cheesy Crispy Dill Pickles

Serves 2-4 servings


Ingredients

  • 8 pieces of fermented pickles

  • 1/2 cup of crushed pork panko

  • 1/2 cup of egg whites

  • 1/8 tsp black pepper

  • 1/8 tsp of real salt

  • 1/8 tsp of garlic

  • 1/2 tbsp of red pepper chili flakes


Method

  1. Preheat the oven at 400F.

  2. Place the drained pickles in a large bowl and add the seasonings and mix well.

  3. Pour the egg whites and mix again.

  4. Place the pickles in a baking tray.

  5. Sprinkle the pork rinds on top.

  6. Air Fry for 18-20 minutes.

  7. Once cooled lay the fries in a plate, top with the cheese and extra pork rinds.

  8. Microwave for 1 minute or until the cheese melts.

  9. Add the fresh red pepper chili flakes.

  10. Enjoy!
