Rainy days call for all the comfort foods! This has been a recipe idea that I have been wanting to try for a while now and it finally happen, and it almost didn't happen. You see, the thing when it comes to photography is lightning!
It's important to plan your day and cooking around daylight to take the best shoots. I'm not a professional but I can speak from experience, and when I decided to cook this the rainy day wasn't helping, or traffic. Now you see that timing is essential.
One thing that doesn't change though is the taste, thankfully! This was an explosion of flavors and I'm not speaking literally because of the chipotle part, don't worry. If you are new to chipotle peppers they are not super spicy, they just add a slightly hint of spiciness without setting your mouth on fire.
You actually build a chili resistance eventually. As a kid I didn't tolerate any spice but eventually my palate built up a taste for it. Always start slow, baby steps.

And for the picky eaters, we are going to add an unnoticeable ingredient, zucchini! This is such a great way to incorporate veggies in, specially with some people (my dad) and some kids that resist themselves from eating veggies.
You only need one mixing bowl and your iron skillet! That's all you need! This is why this recipe is super easy and of course, delicious.
Some of the ingredients here are Naked Bacon, I like this bacon because of the great taste and minimal ingredients (Whole 30, Keto and Paleo friendly), these bacons are a gem in a world filled with ultra processed meats with weird ingredients added.
Also, pork panko, a kitchen game changer for all my keto friends! This is a nut-free and wheat-free alternative of flour, obvs, and nut flours! This is basically ground pork panko plus it adds great flavor to recipes! We used this to top the cheese.
For the cheese I simply decided to use the one we usually get, grated mozzarella. But feel free your favorite melty cheese! Work this recipe on your favorite, you are going to love it!

Cheesy Turkey Chipotle Skillet

Serves 8
Ingredients
- 1 lb of ground turkey
- 2 eggs
- 1 cup of grated raw zucchini
- 2 tbsp of chipotle peppers
- 1 tsp of sea salt
- 1/4 tsp of black pepper
- 2 slices of bacon
- 1/2 cup of grated mozzarella cheese
- 1/4 cup (0.5oz) of pork panko.
Method
1. Preheat the oven at 350F.
2. In a mixing bowl add ground meat, sea salt, chipotle peppers, zucchini, black peppers and eggs. Mix well.
3. Transfer mix into an iron skillet and spread the meat evenly.
4. Bake for 40 minutes.
5. Once it's cooked top with shredded cheese and pork panko and bake for 5 more minutes.
6. Slice and enjoy!
