Cherry Chai Cake Batter (Vegan & Low Carb)

Cookie dough, cake batter, no bake treats! You name it and I'm all about that, there's something that makes these recipes so fun to make and to enjoy... who doesn't love a single serving recipe loaded with flavor and easy to make? Just the perfect go-to!


Also, it's important to mention that cherry chai cake batter is low carb, gluten free, vegan and freaking delicious! This recipe is perfect as a snack or dessert, contains plenty of protein and without all the sugar since we are using a keto friendly plant based protein and white chocolate chips!



About these Cherry Chai Cake Batter:

I kept it simple and very convenient. I used a keto friendly white chocolate chips, cherries and my favorite plant based protein powder for the base. The inspiration from this recipe was nothing but by crossfit crush who told me about a raspberry chai tea he had and loved....


Took the information in and processed it into this cherry chai cake batter! A single serving recipe using cherries since these beauties are on season, some of Evo Hemp Smoothie Topping that has coconut, chocolate and hemp seeds.



I also added some plant based protein in vanilla flavor it add some volume, flavor and nutrient density, in this recipe it didn't blend completely with the rest of the ingredients so there were some parts that really reminded me of the cookies!

The combination of the chai and vanilla protein powder is just a little extra touch that makes a difference on the texture too! Since it's a pea protein base it tends to absorb a little bit more of liquid making the mixture denser and thicker.


Plus the flavor of chai along with the white chocolate chips and cherries is just a DREAM! It reminds me also of my White Chocolate Chai Scones recipe.


The perfect afternoon snack or dessert no matter the season! I'm a firm believer that having a good protein snack is always a good idea, and single servings are just the perfect recipe to have on hand and ready to prepare no matter how much time you've got.

You can see that the ingredients are pretty basic, and the method is the easiest thing to do! For a strong chai flavor I concentrated two chai tea bags in 1 cup of hot water. Since peo protein tends to absorb more water I kept the portion to 1 cup but you can alter the amount of liquid to get the consistency you want.


For the chocolate as a topping I decided to go with these ones from Evo Hemp white chocolate chips, that are also keto and vegan friendly, from them I also used their smoothie toppers.


To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

The end result

It's hard to resist the combination of chai and white chocolate... plus the fact that we also added some cherries and coconut from the granola, I'll just put it that way! Specially when we are talking about a recipe that it's also keto friendly and gluten free! Who would have known... this is just a recipe that you have to try and share with your friends.

Cherry Chai Cake Batter

Serves 1 serving


Ingredients

Filling

  • 1 scoop of Nuzest Plant-Based Protein - Vanilla

  • 1 cup of hot water

  • 2 chai tea bags

  • 4 tbsp of granulated monk fruit

  • 1/4 cup of cherries

  • 1/4 cup of white chocolate chips

  • 1/4 cup of hemp seed grain free granola


Method

  1. Add the tea bags in the hot water and let it sit for 5-8 minutes.

  2. In a little bowl mix granulated monk fruit, pea protein and part of the granola.

  3. Add the concentrated tea into the bowl with the protein mix and blend well.

  4. You can add more liquid depending on the texture you want.

  5. Add the cherries and white chocolate and serve!
