Inspired by my one of my favorite orders at McDonalds. A delicious easy to make gluten-free, yummier and healthier version of a classic McDonalds breakfast sandwich, AKA the McMuffin sandwich. Such a comfort food and something you'll find all around the world as part of a classic American breakfast.
There's something about cheese, chipotle, sun-dried tomatoes and bacon together that it just so special and delicious, I decided to incorporate them in this gluten-free McMuffin recipe. This will make a great healthy and fun recipe for you to make for your family, picky eaters? Give this a try!

This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by stuffing adding some chipotle and sun-dried tomato to your regular egg sandwich... inspired from one of my favorite McDonald's breakfast dishes, the McMuffin.
Using also some Canyon Bakehouse Burger Buns and a touch of Pederson's Farms bacon, this recipe is made with all high in protein, and gluten-free ingredients that will please your tastebuds in every bite.

As I mentioned earlier, I used Canyon Bakehouse Burger Buns which are super versatile and fluffy, the perfect base for this street food torta inspiration by adding some Pederson's Farms bacon and some greek yogurt chipotle sauce.
And for this recipe you only need a skillet to cook the eggs! Cheesy, and creamy filling, you are going to simply love them, plus these are fail proof, made with simple ingredients.

Chipotle Bacon "McMuffin"

Serves 1 serving
Ingredients
1 Canyon Bakehouse Gluten-Free Burger Buns
2/3 scrambled egg whites (seasoned to taste)
1/4 cup of sliced sun-dried tomatoes
2 pieces of cooked bacon
1 slice of American cheese
2 pieces of baby bell light cheese
2 tbsp of greek yogurt
1 tbsp of chipotle
Method.
Whisk the eggs with seasonings. Cook the eggs in a skillet.
Spread the beans over each slice of bread.
Add the rest of the ingredients and top the other half of the English muffin.
Enjoy!
