Chocolate Caramel Pistachio Carrot Cake

Serves 1-2
Ingredients
Cake
1 cup of low carb pancake mix (used Prozis - PURELYHL for discount)
1/2 tsp of baking powder
1/2 tsp of ginger
1/2 tsp of cinnamon
1/3 cup of Rx Sugar alullose (MARIA20 for discount)
1 banana
1 tsp of vanilla extract
1/3 cup of water
1 tbsp of raw pistachios
1 tbsp of sugar-free chocolate chips
Caramel Sauce
1 tbsp of Artisana Organics Cashini Butter
1/3 cup of coconut yogurt
1 tbsp of maple syrup (or sugar-free caramel syrup)
1 tsp of vanilla extract
Toppings
1 tbsp of raw pistachios
1 tbsp of sugar-free chocolate chips
Method
Preheat the oven at 325F.
Mix all the all the dry ingredients for the cake.
Add the wet ingredients and mix again.
Transfer to a small baking dish or iron skillet.
Bake for 15-18 minutes.
Mix the ingredients of the sauce.
Top the cake with the sauce and toppings.
