This recipe overall is low carb, low sugar, gluten free and of course, delicious. I used the Organic Low-Fat Buttermilk from Kalona SuperNatural as my secret ingredient that will make this recipe so moist and extra moist... hard to say no to this one!


This is just a great snack to make anytime of the year! It's an unmissable recipe that everyone will love and will also nourish your body... since Kalona is made from from grass-fed cows on small family farms who practice regenerative farming, Non- homogenized, low temp pasteurized dairy- as closest to raw milk as possible.

Chocolate Cashew Buttermilk Banana Muffins

Serves 12 muffins


Ingredients

  • 1/2 cup of coconut flour

  • 1 cup of almond flour

  • 1/2 cup of granulated monk fruit

  • 1/2 tsp of baking powder

  • 1 tsp of cinnamon

  • 1/4 tsp of cardamom

  • 1 cup of Kalona SuperNatural Organic Low-Fat Buttermilk

  • 2 ripe banana (heated in the microwave for 1 minute)

  • 1 tsp of vanilla extract

  • 2 tbsp of melted french butter

  • 2 eggs

  • TOPPINGS: 1/4 cup of cashews mixed with dark chocolate chips

Method:

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the muffins in a large bowl.

  3. Add the wet ingredients and mix well until everything is fully incorporated.

  4. Pour the batter into 12 silicone muffin cups and bake for 22-25 minutes.
