Cheesecake meets HEALTHY!
Yes! What I love about sharing my recipes and developing recipe for my blog, is to create fun, indulgent and amazing recipes that are both: healthy and delicious. This is just like me other recipes.
Here are tow of my favorite food fusions, cookies and cheesecake. For this recipe I used simple and better for you ingredients such as ricotta cheese (organic would be better!), Super Fat cookies which are gluten free, free from inflammatory oils and keto certified!
The base is from some staples; coconut flour as the main ingredient for this part of the recipe, beef gelatin to make the ingredients stick, cinnamon for some taste and granulated monk fruit for that low carb sweetness, the one I use is from Lakanto, their golden granulated monk fruit, use code PURELYHL for discount.
To step of the game and take things to the other level, just like I love to do, I included a crushed chocolate bar. The one I use is from Evolved Chocolate - Almond butter, paleo and with simple ingredients.
Those are just product suggestions that I really like from taste and ingredients, it's important to enjoy eating healthy so I always love tying new products and sharing with you the brands that my tastebuds approved.
For this recipe the main ingredients!
Coconut flour
Beef gelatin
Granulated monk fruit
Ricotta cheese

You are going to loveeeee these so much! They are super easy to make and there's no baking required, you just need to mix-blend-pour-top, easy peasy steps. You know that I love uncomplicated recipes, that includes no bake recipes and this is also why I love using beef gelatin!
Beef gelatin has become one of my favorite staples since it's super easy to make and it really goes a long way when it comes to recipes while adding nourishing amino acids that are good for our gut.
The easy peasy steps!
Mix all the dry ingredients of the base in a bowl.
Add hot water and mix well.
Press the dough into four single serving dishes. Set aside.
Blend all the ingredients of the cheesecake filling and pour over each little tart base.
Add your toppings.
Freeze!
The results
A simple and satisfying sweet recipe for a great snack or dessert that will kick that sweet tooth. With a creamy consistency and a delicious combination of flavors; chocolate + cookies + vanilla.

Chocolate Cookie Cheesecakes

Serves 12
Ingredients
Base
2/3 cup of coconut flour
2 tbsp of beef gelatin
1 tsp of cinnamon
1/4 cup of granulated monk fruit
1 cup of hot water
Cheesecake Filling
1/2 cup of almond milk
2 cups (200g) of ricotta cheese
Monk fruit (PURELYHL for discount)
Toppings
1 pack of Super Fat Cookies (PURELYHL for discount)
1 (2.5 oz) chocolate bar (I used Eating Evolved - Almond Butter)
Method
Mix all the dry ingredients of the base in a bowl.
Add hot water and mix well.
Press the dough into four single serving dishes. Set aside.
Blend all the ingredients of the cheesecake filling and pour over each little tart base.
Add your toppings.
Freeze!
