We are showing some love to all my puff pastry and Pop Tarts enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra pretty but still delicious twist by just using some Artisana Market cacao hazelnut spread and raw almond butter for the filling with a banana, a sugar-free glaze and edible glitter.

Keeping it extra delicious and just epic by using some banana and cacao hazelnut spread for the pretty pop of color and nutrients, and to make it even healthier we are using granulated monk fruit as our sweetener, some puff pastry, granulated monk fruit, powdered monk fruit, banana, almond butter and cacao hazelnut spread.

You won't see puff pastry another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some puff pastry, granulated monk fruit, powdered monk fruit, edible glitter and Artisana Market cacao hazelnut spread and raw almond butter.  The perfect flaky texture with a chocolate rich filling.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat puff pastry another way! These are super easy to make and just super yummy, plus easy to make. These is basically a fail proof recipe, the consistency is flaky with a chocolate rich and fudgy filling.

These are perfect to enjoy with a cup of milk, coffee or chocolate. You can reheat them in the microwave for 12 seconds and done, the perfect dessert to share... or not!

Perfect Keto Pancake Mix

 

Chocolate Hazelnut Banana "Pop Tarts"

Serves 3 big poo tarts (6 regular size)


Ingredients

  • 1 pack of puff pastry

  • 1 tbsp of Artisana Market raw almond butter

  • 1 tbsp of Artisana Market cacao hazelnut butter

  • 1 banana

  • 1 egg

  • 1 tsp of vanilla extract

  • 1/4 cup + 2 tbsp of granulated monk  fruit

Glaze

  • 2 tbsp of unsweetened almond milk

  • 1/2 cup of powdered monk fruit

  • Chocolate Sprinkles


Method

  1. Preheat the oven at 385F.

  2. Mix the almond butter with cacao butter, banana, 1/4 cup of granulated monk fruit and vanilla extract.

  3. Roll out the pastry and slice into three pieces.

  4. Add a dollop of the almond butter mix in three sections..

  5. Fold each slice and seal them with a fork

  6. Mix the egg and spread with a brush.

  7. Sprinkle granulated monk fruit.

  8. Bake for 12 minutes.

  9. Mix the ingredients for the glaze and drizzle it over baked and cooled pastries.

  10. Add optional chocolate sprinkles.

  11. Enjoy!
