Chocolate Hazelnut Mocha Cups Pies (Low Carb & Gluten Free)

Cookies are hard not to love, and so does a creamy chocolate hazelnut spread. In this recipe I decided to mix two of my favorite things (well, really three!) and create the most amazing cookie pie recipe... easy to make and extremely delicious while being secretly healthy.


Cookie cups with a delicious combination of hazelnut and mocha! One of the best parts of this recipe is super easy to make, trust me... so basically is just mix, pour and bake, extremely easy! But these cookie pies are gut friendly since we are skipping the gluten and all the inflammatory and refined sugars.

Let's go beyond the classic cookie with chocolate chips and let's create a fusion of flavors that nobody will be able to resist! I also wanted to include a twist, a fun a de delicious twist by just using Good Phats as my base, a chocolate chip cookie mix that will make things ever easier.


This cookie mix just saves us a lot of steps, ingredients and it also keeps things low carb. We are just adding some eggs and MCT (coconut oil and ghee also work!) for the cookies and the filling is also super simple to make and secretly packed with protein.


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Marigold Vanilla Latte Protein Coffee, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla latte (keto and gluten free!).

With a creamy chocolate hazelnut filling! In this occasion I used OWN Hazelnut Spread, made with simple ingredients, creamy and heavenly with only 100 calories per 2 tablespoons, you are just going to love it.... and of course, greek yogurt. I used organic and unsweetened and I use monk fruit to add sweetness, greek it's also a great source of probiotics!



Coffee! For the coffee touch I simply prepared the protein coffee from Marigold Vanilla Latte Protein Coffeethat adds some collagen, gut love and all the flavor! Plus some amino acids.


Did I also mention that these cookie cups have only 162 calories per cup? So these are a gret snack, low in sugar, carbs and inflammatory ingredients. We've got the goods!

The cookie base is just perfect and along with the hazelnut, is just another level that makes the perfect match for your latte!




You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Chocolate Hazelnut Mocha Cups Pies

Serves 12 servings


Ingredients

Cookie Cups

  • 1 cup of Good Phats Keto Cookie Mix (PURELYHL for discount)

  • 2 scoops of Marigold Vanilla Latte Protein Coffee (PURELYHL for discount)

  • 3 egg

  • 3/4 cup of greek yogurt

  • 1/2 cup of OWN Hazelnut Spread

Topping

  • 4 scoops of Marigold - Rich Chocolate Grass Fed Whey (PURELYHL for discount)

  • 3/4 cup of greek yogurt

  • 1/4 cup of hazelnuts

  • 1 oz. of cream cheese room temperature

  • 2 tbsp of low carb chocolate chips


Method

  1. Preheat the oven at 350F.

  2. Mix the cookie mix with the protein coffee and slowly add the egg and greek yogurt.

  3. Stir well and add the cookie batter into 12 silicone muffin cups.

  4. In a bowl mix the hazelnut spread and greek yogurt.

  5. Top the cookies with the hazelnut spread and create swirls with a knife.

  6. Bake for 18-20 minutes.

  7. In a bowl mix the greek yogurt and cream cheese for the topping with the chocolate whey.

  8. Top each cookie cup with the last mix and finish up with the hazelnuts and chocolate chips.

  9. Enjoy!
