Serves 5 large cookie sandwiches


Ingredients

  • For the Cookies:

    • 1 1/2 cups of Dilettoso Choc-O-Lotta Dilettoso Mix

    • 1 tsp of baking powder

    • 2/3 cup granulated monk fruit sweetener

    • 3/4 cup chocolate butter

    • 2 large organic eggs

    • 1 tsp of vanilla extract

    • 1 pinch of sea salt

      For the Filling:

    • 1 block of of cream cheese, room temperature

    • 2 tbsp of matcha powder

    • 1 cup of powdered monk fruit

    • 1 tsp of vanilla extract


  • Instructions

    1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. Combine Dry Ingredients: In a large bowl, mix the Dilettoso pancake mix, baking powder, sea salt and monk fruit sweetener until well blended.

    3. Incorporate Wet Ingredients: Add the chocolate butter, vanilla extract and eggs to the dry mixture. Mix until all ingredients are fully combined and form a cohesive dough.

    4. Shape Cookies: Use your hands to form the dough into 10 large cookie shapes, placing them evenly on the prepared baking sheet.

    5. Bake: Bake in the preheated oven for about 10 minutes, or until the edges are lightly golden. Once baked, allow the cookies to cool completely on the baking sheet.

    6. Prepare Filling: In a separate bowl, beat together the cream cheese, powdered monk fruit, matcha powder, and vanilla extract until smooth and creamy.
