Chocolate Mint Cheesecake Popsicles (Keto & Gluten Free)

Warmer days or not, these popsicles will be on repeat all year long! Easy blender recipe, low carb, gluten free and creamy popsicles made with just the simplest ingredients that everyone can do no matter the skills.


These chocolate mint cheesecake popsicles have been my favorite snack or dessert at the moment, also because they extremely easy to make! Just blend all the ingredients and done done! Freeze and enjoy!



About these Chocolate Mint Cheesecake Popsicles:

In these popsicles I used some chocolate mint fat bombs and cream cheese; two ingredients that add thickness and creaminess... simply heavenly! You are going to love the chocolate taste with the combination of cream cheese.


A great summer or spring treat or snack and satisfying thanks to the ingredients. Low carb and gluten free. You can add some collagen to add a touch of protein as well.



These are also great to share with anyone since these are low carb and made with granulated monk fruit the perfect combination for steady glucose levels! From the fats from the fat bombs and cream cheese. Specially if you use grass-fed cream cheese for a better version and a little bit more nutrient dense.

So besides being an extremely easy recipe (it only took me about 10 minutes) to prepare these are super creamy thanks to the cream cheese and the fat bombs; the taste is unbelieve too! And let's not forget about the toppings.



For the toppings I simply melted some chocolate, can't get enough! And some peppermint chocolate chips and it was just the perfect way to finish this recipe, and to add a little cuteness to them.



Creamy, chocolately. Just what you need for these warmer days... or not so warm.

For the chocolate I'm using Jojo's, my favorite one to bake, freeze or melt! It's keto friendly and all of my family really enjoys it... I even send some bags to my sister in Mexico City since she is also hooked by this healthy chocolate.

Method

  1. Blend all the ingredients for the popsicles.

  2. Pour the ingredients in a popsicle silicone mold.

  3. Freezer overnight.

  4. Melt the chocolate and drizzle on top of the popsicles.

  5. Top with chocolate mint.
