Okay, no matter the season chocolate mint is always on repeat here! I made the easiest chocolate mint fudges using some of my favorite ingredients... healthier, gluten free and low carb! Just the perfect lil' snack bites to pop into your mouth and let me melt inside!
No bake gut friendly and delicious cookie fudge! One of the best parts of this recipe is the no bake part, and the fact that you only need your blender or food processor. You know that I'm all about keeping recipes healthy and easy to make while enjoying the flavor of them as well! This recipe is no different.
About these Chocolate Mint Cookie Fudge Bites:
Okay, these are made with minimal ingredients including: gluten free cookies and cream cheese... sounds good just with that right? But with that I also wanted to include a twist, a fun a de delicious twist by using Simple Mills Sweet Thins in Chocolate Mint that will keep our recipe healthier and gluten free!
To add that extra crunch factor of this recipe I also included some of the low carb chocolate chips, in mint chip of course, the brand I used is ChocZero, but feel free to use the ones you like! These amplifies the chocolate mint flavor and that crunch we all love.

Adding some protein powder for extra thickness and a satisfying filling. Organic cream cheese! I believe that choosing better ingredients makes the difference, and it does! For example by switching to organic cream cheese you get more nutrients since the cow tends to have a better nutrition and you get some probiotics from the cream cheese, double win!

Keeping it gluten free by using the named cookies, and using some organic cream cheese that will add some probiotics to our recipe, optional you can also add some collagen. Personally I love sneaking collagen into my recipes whenever I can, it's just a little extra that boost some nutrients!
The collagen peptides I used are from Marigold because of their quality... grass fed!

Chocolate Mint Cookie Fudge Bites

Serves 20 servings
Ingredients
1 (120g) container of Simple Mills Sweet Thins in Chocolate Mint
1/4 cup of Nuzest Vanilla Smooth Pea Protein
1/3 cup of granulated monk fruit
1 block (8oz) of organic cream cheese
1/2 cup of unsweetened almond milk
1 tsp of vanilla extract
1/4 cup low carb chocolate mint chips (used ChocZero)
2 scoops of grass-fed collagen peptides (I use Marigold)
Method
In your food processor or blender add the cream cheese and cookies. Pulse for a few seconds.
Add the almond milk, monk fruit and vanilla extract and pea protein (or coconut flour) and pulse again until it's fully incorporated.
Add the chocolate chips and mix with a spoon.
Scoop the dough with a cookie scooper, it will create around 20 bites.
Freeze a few hours or overnight and enjoy!
