These are not the usual enchilada recipe, that part is very clear... we are going to be making dessert enchiladas! We are keeping the recipe low carb, vegan and keto friendly and also nourishing... using simple ingredients that are also good for you.
To keep it vegan, keto friendly and gluten free by using Almond Flour Keto Tortillas from Maria and Ricardo's, avocado, cacao and vegan vanilla pea protein. So we are focusing on simple wholesome ingredients, everything nutrient dense.

Chocolate Mousse Enchiladas

Serves 8 servings
Ingredients
2 medium avocado
1/4 cup of vegan vanilla pea protein
3 tbsp of cacao powder
1 tbsp of low carb chocolate chips
1/3 cup of granulated monk fruit
Method
Preheat the oven at 350F.
In a food processor or blender add the avocado, cacao powder, pea protein and monk fruit and pulse until fully smooth.
Microwave the tortillas for a few seconds (about 30 seconds) to make them softer and easier to roll.
Add a spoonful of the mix in each tortilla and roll them carefully. Place them in a baking tray.
Bake them for 12-15 minutes.
Let them cool and top with leftover avocado mousse and chocolate chips.
Serve and enjoy!
