Chocolate Pumpkin Muffins for Two

Serves 2
Ingredients
3/4 cups of oat flour
1/4 cup of gluten-free flour
1 tsp of cinnamon powder
1/2 cup of granulated monk fruit
1 tsp of baking soda
2 tsp of vanilla extract
1/2 tsp of almond extract
1/4 cup of vanilla greek yogurt
1/4 cup of whole milk
1/4 cup of pumpkin puree
Chocolate Frosting
3/4 cup of vanilla greek yogurt
3 tbsp of cacao powder
Toppings
2 tbsp of sugar-free chocolate chips
2 of your favorite mini chocolates
Instructions
Preheat the oven at 350F.
Mix the dry ingredients for the cupcakes.
Add the wet ingredients and mix until fully incorporated.
Transfer to 2 recycled steel cans.
Bake for 25 minutes.
Let it cool down completely.
Mix the ingredients for the frosting.
Top the muffins with frosting, chocolate and enjoy!
