Chocolate Pumpkin Muffins for Two

Serves 2


Ingredients

  • 3/4 cups of oat flour

  • 1/4 cup of gluten-free flour

  • 1 tsp of cinnamon powder

  • 1/2 cup of granulated monk fruit

  • 1 tsp of baking soda

  • 2 tsp of vanilla extract

  • 1/2 tsp of almond extract

  • 1/4 cup of vanilla greek yogurt

  • 1/4 cup of whole milk

  • 1/4 cup of pumpkin puree

Chocolate Frosting

  • 3/4 cup of vanilla greek yogurt

  • 3 tbsp of cacao powder

Toppings

  • 2 tbsp of sugar-free chocolate chips

  • 2 of your favorite mini chocolates


Instructions

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the cupcakes.

  3. Add the wet ingredients and mix until fully incorporated.

  4. Transfer to 2 recycled steel cans.

  5. Bake for 25 minutes.

  6. Let it cool down completely.

  7. Mix the ingredients for the frosting.

  8. Top the muffins with frosting, chocolate and enjoy!
