Chorizo Taco Egg Bakes (Low Carb & Easy to Make)

We all love a good taco... and avocados, right?! So I'm bringing this mashup of a taco bake that will knock the classic avocado toast to the park, this recipe is super easy to make and as pretty as a classic and very Millennial avocado toast.


Egg and chorizo... the dream team in a Mexican breakfast! This is just a classic, chorizo and eggs for a Mexican breakfast, I remember by dad making me chorizo egg scrambled burritos for breakfast on the weekends and you bet I was a very happy kiddo.



About these Chorizo Taco Egg Bakes:

I'm such an egg person, and no matter the time of the day I'm always down for a breakfast inspired recipe! So in this case I created a mashup of my Mexican food love that runs in my veins with my love for breakfast foods.


Creating a fun taco egg bake with some of my favorite Mexican breakfast ingredients such as tortillas, eggs, chorizo and Mexican cheese... in this occasion I'm using queso panela.


Key Ingredients:

The key ingredient on any taco recipe recipe is of course, tortillas! And I know that corn tortillas are the ones we usually use but I'm here to tell you that using Fiber-Rich Whole Wheat Tortillas from Maria and Ricardo's, is a game changer, these only have 4 net carbs and 45 calories per serving.

The fillings are just simple Mexican staples but ingredients you can also find at your local super market; chorizo, eggs, cheese and avocado. The tastiest combination of them all! For the cheese I decided to use panela cheese but you can also use mozzarella, halloumi or your favorite cheese!

Chorizo Taco Egg Bakes

Serves 4 servings


Ingredients

  • 4 Fiber-Rich Whole Wheat Tortillas from Maria and Ricardo's

  • 4 eggs

  • 1/2 cup of panela cheese (or mozzarella)

  • 1 avocado

  • 1/2 cup of mexican chorizo

  • 1 tsp of pink salt

  • 1/2 tsp of black pepper


Method

  1. Preheat the oven at 350F.

  2. Place the tortillas in a single serving or 4-inch baking dish.

  3. Crack the egg on top of the tortilla and add the slice avocado, cheese, chorizo and seasonings.

  4. Bake for 20-14 minutes.

  5. Serve and enjoy!
